100% Procanico from the old vines in Gradoli (over 35 years old), blended with a part of purchased grapes. The Procanico purchased was destemmed and left on the skins for four days before pressing. The Procanico from the old vines was harvested a few weeks later and macerated for a week. The two wines were blended in December. The old vines bring balance, structure and stability to the fresh acidity of the purchased fruit. Fermented and aged in fiberglass. 11% alc.
